Our Philosophy.

Dispensa Franciacorta was founded with the goal of becoming a point of reference in Franciacorta for lovers of good food and good wine.
Today it is a “place” of a thousand faces, where we guide our guests in discovering this beautiful region—from the aperitivo at the counter and the wines of our Wine Shop to the traditional dishes of the Osteria.
Our passion for the region translates into a careful search for the right product, for quality ingredients and the finest Slow Food Presidia, paired with a rich selection of labels—with special attention, of course, to Franciacorta.

Today the restaurant continues its journey under the guidance of Daniele Merola, a young and passionate host who is as convinced now as he was in 2008 that the variety of Dispensa’s offering—together with its quality, the ongoing selection of the finest ingredients, and the desire to make every guest feel at home—can be the added value of a restaurant with a very strong identity.

Daniele’s right-hand man is Marco Zampedri, a versatile figure whose role spans hospitality, front-of-house service in both the restaurant and the osteria, purchasing for the counter, and managing orders and the register.

At the helm of the kitchen at Dispensa Franciacorta is Chef Daniele Provezza, who brings his reinvented traditional cuisine to life in the Osteria, favoring seasonal, fresh ingredients and products from the Franciacorta area, and working them with great technique and imagination.

The Restaurant.

A place with many souls

Dispensa Franciacorta is the ideal place for lunch, an aperitivo, or a casual dinner, immersed in a warm, family atmosphere. The polished yet informal setting welcomes guests, showing off the beautiful open kitchen where the chef and his team focus on preparing the dishes.  The wine bar showcases the magnificent deli counter with its wide, irresistible selection of cured meats and cheeses, many of them Slow Food Presidia and locally sourced. The space dedicated to the Modern Osteria, with its natural-wood tables, is made even more striking by the display of products and by the varied labels of the countless bottles of wine from the Wine Shop that fill its walls. The large windows look out onto a charming outdoor area, with its Corten-steel planters holding majestic perennial herbs and tall plants: an ideal space in spring and summer but, above all, perfectly suited to parties and banquets, given its proximity to the large Event Hall that completes the interior.
