Today the locale is guided by young and passionate host Daniele Merola, sure as now as he was a decade ago that the versatility of Dispensa Pani e Vini, along with its commitment to quality, its continuous search for the best ingredients, and its efforts to make each guest feel at home, are what have shaped the Dispensa’s identity and success.
The kitchen is helmed by young chef Marco Acquaroli, winner of the reward of Bocuse d’Or Italy in 2016 and enriched of a lot of experiences in foreign countries and in starred restaurants, who since January 2017 has proposed both a traditional menu at the Osteria and gourmet menu at the Restaurant, utilizing only seasonal, fresh ingredients sourced directly from Franciacorta. On the 5th of December 2017 Marco has become world champion kitchen with truffle winning the international contest “Cooking With Trufa”.
